    Amitai was born in Jerusalem to a family living in the country for five generations. In 1922-1925, he studied at the Bezalel School of Arts & Crafts. In 1928, he went to Egypt to study under the painter Naroni. In 1931-1934, he continued his studies at Ecole Superieure de la Ville, Paris.

    From 1940, Amitai showed his work at group exhibitions of the Artists Association. He was one of the founders of the Artists' Colony in Safed, where he lived and worked most of the year. He lectured at schools and colleges in Tel Aviv.

    Amitai painted in oils and tempera. He also worked in silkscreen.
