Maimon did military service and then studied at the Avni Institute of Fine Art in Tel Aviv where he was exposed to the Paris school. In 1980, he began a teaching career, starting at the School of Visual Arts in Beer-Sheba and later at the Kaye Art Academy. By the late 1980s, he was a Professor of Art at Ben-Gurion University in Beer-Sheba. During this time, he learned about coffee house management and bought a pub and ran a restaurant.
